Peanut Butter Pancakes
Ingredients:
1 ½ cups sifted flour
2 Tbps. Sugar
2 ½ tsp. baking powder
½ tsp. salt
1 1/4cups milk
1 beaten egg
¼ cup peanut butter
1 Tbps. Vegetable oil
1. First, mix together the flour, baking powder, sugar, and salt. Make sure it is well combined and that there are no lumps.
2. In a separate bowl, stir together the milk, beaten egg, peanut butter, and vegetable oil. Make sure the peanut butter is mixed in well so that there are no lumps.
3. Pour the wet ingredients over the dry ingredients and stir gently, only enough to moisten the dry ingredients. Don’t over-beat the batter the pancakes will be tough.
4. Heat up a griddle to 350° or a pan on the stovetop to medium-high heat. Lightly grease the pan with vegetable oil.
5. Pour the batter onto the pan with a ladle or measuring cup. They should be about 4 to 5 inches in diameter and spaced about 2 inches apart.
6. Let them bake on the pan for about 3 to 5 minutes until bubbles evenly form across the pancake. Flip with a spatula and they should be golden brown.
7. Let them bake on the other side for about 2 or 3 minutes more.
8. Remove them from the pan and serve them with jelly, chocolate syrup, maple syrup, powdered sugar, or anything you would like!
