Chocolate Pancakes
Ingredients:
2 cups sifted flour3 tsp. baking powder
½ tsp salt
1 cup sugar
2 Tbsp. cocoa
1 cup milk
1 Tbsp. butter, melted
2 beaten eggs
1. Combine the flour, baking powder, salt, sugar, and cocoa in a bowl and stir well.
2. In a separate bowl, combine the milk, butter, and beaten eggs. Stir to combine being careful not to over-beat the eggs.
3. Pour the wet ingredients overtop of the dry ingredients and stir gently. Don’t over-beat the batter or they will become tough. If there are a few lumps, that is okay.
4. Use a hot griddle or pan lightly greased with vegetable oil. Heat the pan to 350° or medium-high heat. Make sure the pan is hot before you add the batter.
5. Pour the batter onto the pan with a ladle or measuring cup with about 2 inches in between each pancake. The pancakes should measure about 4 to 5 inches in diameter.
6. Bake the pancakes for about 3 to 5 minutes until tiny bubbles evenly cover the pancakes. Flip them over with a spatula. They will not look golden brown, because they are chocolate, but they should look cooked and have the appearance of a baked cake.
7. Continue to let them bake for another 2 or 3 minutes and remove them from the pan.
8. Drizzle with chocolate syrup or melted chocolate and top with powdered sugar.
