Potato pancake recipe



Ingredients:

5 potatoes

1 egg, slightly beaten

¼ cup flour

2 tbsp. grated onion

salt and pepper

butter

1. Cube the potatoes and put them into a food processor. Grate until it is chopped, but not pureed. You can also grate them by hand or use a grater attachment on the food processor. I would recommend you grate them for best results.
2. The onion can be grated as well, or you could add about half of a small onion in with the potatoes when you process them.
3. Put the potatoes in a bowl and add the egg, flour, onion, and a pinch of salt and pepper to taste.
4. Mix it all together well. Form them into patties about the size of pancakes, or a little smaller.
5. Turn on the stove to medium high heat and put about 2 to 3 Tbsp. of butter in a skillet and melt the butter.
6. When the pan is hot, place the patties in the pan and cook on each side for about 5 to 10 minutes until both sides are golden brown. Add more butter as necessary so that they don’t stick and so that they brown nicely.
