Quick and Easy Chickpea,tomato and Cucumber Salad



* 1 can or 14oz cooked chickpeas
* 2 medium cucumbers, peeled, large dice
* 1 large tomato cubed
* 4 lettuce leaves
* 1 clove garlic, peeled
* 1 TBSP fresh lemon juice
* 2 TBSP good olive oil
* salt and pepper to taste
* 1/4 tsp paprika

Drain chickpeas, rinse, drain well.

In a salad bowl, crush the peeled garlic, add lemon juice and olive oil

Peel and dice the cucumbers. Add to salad.

Add chickpeas, toss.

Add Tomatoes

Add salt, pepper, paprika, toss and taste.

Adjust seasoning and serve on a bed of lettuce.
